Additionally, it enhances access to international markets and fosters long-term relationships with buyers. One notable member cooperative, ASDEFLOR, established in 2012 in Todos Santos,
cultivates certified organic coffee at elevations of 1,600–1,800 meters above sea level. This collaboration empowers members with greater bargaining power, helping them secure better
prices and long-term stability.
At lighter roasts, this coffee showcases notes of orange and almond, accompanied by layers of cherry and honey sweetness. As it transitions to medium roast, the flavor profile evolves into dulce de leche, balancing cherry and chocolate for a smooth, rounded cup. Medium-dark roasts reveal hints of roasted walnut, molasses, and warming spices, with dried cherry leading to a dark chocolate finish. When roasted darker, it emphasizes graham cracker, baker’s chocolate, and molasses, complemented by a gentle, lingering warmth.
